Our cheese comes direct from organic farmers and small farm-based cheese dairies located within the Waginger See – Rupertiwinkel model eco-region.
Organic farming and traditionally produced foods go hand-in-hand in the Waginger See region. Stephan Scholz turns the fresh milk produced by participating farmers into cheese right there at their farm using his mobile cheese dairy.
In the brick-and-earth cellar, cheese is tended by hand and allowed to mature into delicious semi-hard cheeses. The selection of Waginger See cheeses also includes soft cheeses produced from cow’s milk and cream cheese from goat’s milk, refined with a variety of herbs and spices.
